Chef Billy Manzo has been self-employed for over 20 years, managing various food and beverage establishments. His passion for cooking started young, growing up in a tight-knit family where emphasis was put on family cooking. That’s where he learned how to cook. Later, he worked as a bus boy where he quickly climbed the ranks and learned the industry. He’s also worked at Wolfgang Puck’s Spago in Las Vegas, where he was taken under the wing of the Executive Chef who was originally from Rhode Island. After a short while in Vegas, Billy returned to Rhode Island and opened his own smoking lounge, Sikar, the first and only cigar smoking lounge in the state which he owned for 16 years.

Billy has the distinguished honor of being a Master Pizzaiolo certified by the Scuola Italiana Pizzaioli in Italy. He is also VPN (Vera Pizza Napoletana) certified. Billy is also member of the World Pizza Champions and recently came in third place in the world in the pan pizza division at the prestigious International Pizza Challenge event. He’s frequently a guest speaker at the Pizza Expo and also a guest chef regularly appearing on television.

Before opening their two full service restaurants (Federal Hill Pizza), Billy and his wife Christine launched a wholesale company selling pizza dough and pizza shells throughout Rhode Island, Massachusetts, and Connecticut. Products were featured in 200 locations, which was grown from zero in under three years.

Chef Billy is also a Co-Founder of Chefs Feeding Kids a 501c3 non-profit group of professional chefs and restaurant owners who believe all children should have enough food to eat, and the opportunity to learn how to prepare nutritious meals. Working in concert with food vendors and distributors, individual and corporate sponsors, Chefs Feeding Kids strives to provide well-balanced meals for kids in need and encourage healthy eating habits.

  • Created Thin Crust Delight in 2005, a dough recipe for Papa Murphy’s Take N Bake Pizza. This recipe is still in use today.
  • Winner of more than 120 culinary awards between 2003 and 2017.
  • Writer, Presenter and Speaker for Pizza Today magazine and the International Pizza Expo since 2007.
  • Has won 9 Culinary Awards for Pieology, and came in 4th place in the nation at the Caputo Cup Pizza Championships in 2017.
  • Named one of the Top Ten Pizzaiolo in the nation by Pizza Today magazine
  • 2007 Winner of the (Best Pizza in North America at the Trofeo Citti Di Napoli World Pizza Competition in Italy.

Has been featured in multiple culinary and restaurant industry magazines and has won 120+ awards for sauces, pizzas, pastas and breads. A certified Italian Pizzaiolo since 2009, Chef Glenn is a Restauratuer and Consultant to the Restaurant and Pizzeria industry as well as manufacturers in the Pizza and Restaurant industry.
